भूमि के उपरी परत को चीरकर, पलटकर या जोतकर उसे बुवाई या पौधा-रोपण के योग्य बनाना जुताई, भू-परिष्करण या कर्षण (tillage) कहलाती है। इस कृषिकार्य में भूमि को कुछ इंचों की गहराई तक खोदकर मिट्टी को पलट दिया जाता है, जिससे नीचे की मिट्टी ऊपर आ जाती है और वायु, पाला, वर्षा और सूर्य के प्रकाश तथा उष्मा आदि प्राकृतिक शक्तियों द्वारा प्रभावित होकर भुरभुरी हो जाती है।
