Description
लार मानव तथा अधिकांश जानवरों के मुंह में उत्पादित पानी-जैसा और आमतौर पर एक झागदार पदार्थ है। लार मौखिक द्रव का एक घटक है। लार उत्पादन और स्त्राव तीन में से एक लार ग्रंथियों से होता है। मानव लार 99% पानी से बना है, जबकि इसका शेष 1% अन्य यौगिक जैसे इलेक्ट्रोलाईट, बलगम, जीवाणुरोधी यौगिकों तथा एंजाइम होता है। भोजन पाचन की प्रक्रिया के प्रारंभिक भाग के रूप में, लार के एंजाइम भोजन के कुछ स्टार्च और वसा को आणविक स्तर पर तोड़ते हैं। लार दांतों के बीच फंसे खाने को भी तोड़ती है और उन्हें उस बैक्टीरिया से बचाती है जो क्षय का कारण होते हैं। इसके अलावा, लार दांतों, जीभ और मुंह के अंदर कोमल ऊतकों को चिकनाई देती है और उनकी रक्षा करती है। लार मुंह में रहने वाले वात निरपेक्ष बैक्टीरिया के द्वारा गंध-मुक्त भोजन यौगिकों से उत्पादित थायोल्स (thiols) को फंसा कर भोजन का स्वाद चखने की महत्वपूर्ण भूमिका निभाती है।
