Saffron is a spice derived from the flower of Crocus sativus, commonly known as the "saffron crocus". The vivid crimson stigma and styles, called threads, are collected and dried for use mainly as a seasoning and colouring agent in food. The saffron crocus was slowly propagated throughout much of Eurasia and was later brought to parts of North Africa, North America, and Oceania.

ಕೇಸರಿಯು ಒಂದು ಮಸಾಲೆ ಪದಾರ್ಥವಾಗಿದ್ದು ಇರಿಡೇಸೇಯ ಕ್ರೋಕಸ್ ಜಾತಿಗೆ ಸೇರಿದಂತಹ ಸ್ಯಾಫ್ರನ್ ಕ್ರೋಕಸ್ ಗಿಡದ ಒಂದು ಹೂವು. ಒಂದು ಸಿ. ಸ್ಯಾಟಿವಸ್ ಹೂವು, ಪ್ರತಿ ಶಲಾಕೆಯ ತುದಿಗೆ ಮೂರು ಕೇಸರಗಳನ್ನು ಹೊಂದಿರುತ್ತದೆ.. ಅವುಗಳ ಕಂಠಗಳು—ದಂಟುಗಳನ್ನು ಅವುಗಳ ಆಥಿತೇಯ ಸಸ್ಯಗಳ-ಕೇಸರಗಳಿಗೆ ಸೇರಿಸುವ ಕೇಸರಗಳನ್ನು ಒಣಗಿಸಿ ಅವನ್ನು ಆಹಾರಕ್ಕೆ ಬಣ್ಣ ನೀಡುವುದಕ್ಕಾಗಿ ಬಳಸುತ್ತಾರೆ. ನೈಋತ್ಯ ಏಷ್ಯಾದಲ್ಲಿ ಬೆಳೆಯುವ ಕೇಸರಿಯು ವಿಶ್ವದ ಅತ್ಯಂತ ಬೆಲೆಬಾಳುವ ಮಸಾಲೆ ಪದಾರ್ಥವಾಗಿದೆ.
