मलाई दूध को गरम करके बनायी जाती है और भारतीय उपमहाद्वीप में भोजन एवं मिठाइयों में उपयोग की जाती है। मलाई बनाने के लिए 'पूर्ण दूध' को लगभग ८० डिग्री सेल्सियस ताप पर लगभग एक घण्टे गरम करके ठ्ण्डा होने के लिए छोड़ दिया जाता है। इस प्रकार दूध की ऊपरी सतह पर हल्का पीलापन लिए हुए वसा (fat) और प्रोटीन की एक परत बन जाती है जिसे 'मलाई' कहते हैं। इसे निकाल लिया जाता है। ऊपरी परत निकालने के बाद यही प्रक्रिया दोहराकर दूध में बची हुई वसा और प्रोटीन को निकाला जा सकता है।

Malai, is a type of clotted cream, originating from the Indian subcontinent, used in the cuisine of the Indian subcontinent, especially, in regards to sweets from the Indian subcontinent. It is made by heating non-homogenized whole milk to about 80 °C (180 °F) for about one hour and then cooling it. A thick yellowish layer of fat and coagulated proteins forms on the surface, which is skimmed off.
