शक्कर, शर्करा या चीनी (Sugar) एक क्रिस्टलीय खाद्य पदार्थ है। इसमें मुख्यत: सुक्रोज, लैक्टोज एवं फ्रक्टोज उपस्थित होता है। मानव की स्वाद ग्रन्थियाँ मस्तिष्क को इसका स्वाद मीठा बताती हैं। चीनी मुख्यत: गन्ना एवं चुकन्दर से तैयार की जाती है। यह फलों, मधु एवं अन्य कई स्रोतों में भी पायी जाती है। इसे मारवाडी भाषा में 'खोड' अथवा ' मुरस ' कहा जाता है। चीनी की अत्यधिक मात्रा खाने से प्रकार-२ का मधुमेह होने की घटनाएँ अधिक देखी गयीं हैं। इसके अलावा मोटापा और दाँतों का क्षरण भी होता है। विश्व में ब्राजील में प्रति व्यक्ति चीनी की खपत सर्वाधिक होती है। भारत में एक देश के रूप में सर्वाधिक चीनी का खपत होती है।
