फिटकरी (Alum), एक रंगहीन, क्रिस्टलीय पदार्थ है। साधारण फिटकरी का रासायनिक नाम 'पोटाश एलम' (KAl(SO4)2.24H2O) होता हैं। 'ऐलम' शब्द जब बहुवचन में प्रयुक्त होता है, तब उससे उन सभी यौगिकों का बोध होता है, जो पोटाश ऐलम से संगठन में समानता रखते हैं। ऐसे यौगिकों में पोटैश का स्थान, लिथियम, सोडियम, अमोनियम, रूबीडीयम, सीज़ियम, टेल्यूरियम धातुएँ तथा हाइड्रॉक्सीलैमिन (NH4O) एवं चतुर्थक नाइट्रोजन क्षारक (N(C H3)4) मूलक ले सकते हैं। ऐलुमिनियम का स्थान क्रोमियम (क्रोम ऐलम), लोहा (लौह ऐलम), मैंगनीज, इरीडियम, गैलियम, वैनेडियम, कोबल्ट इत्यादि ले सकते हैं। (AB(SO4)2.12H2O) मूलानुपाती सूत्र (इम्पीरिकल सूत्र) वाले सामान्य यौगिकों को 'एलम' नाम से जाना जाता है।
